Although the rind of this cheese is edible, many people decide to throw it away… Yet, because of their salty taste, the crusts are often used to give flavour to an infinite number of dishes, especially soups and minestrones. Some people have them after heating them for a few seconds in the microwave in order to soften them… they are so tasty!

Here is a recipe where parmesan rinds and stale bread, two of the most wasted food in the kitchen, become precious ingredients!

Veggie meatballs with parmesan crusts and stale bread

Ingredients for 4 people:

  • 300 g of stale bread
  • 200 g of Parmigiano rinds
  • 4 eggs
  • Raisins
  • Pine nuts
  • Parsley
  • Garlic
  • Potato flakes
  • Breadcrumbs
  • Olive oil

Preparation:

Thoroughly clean the parmesan crusts with tap water, using a grater to remove the outermost layer. Cut them in cubes – paying attention to your fingers! – and whisk them into very small crumbs. In a bowl, mix the bread previously soaked in water with eggs, chopped garlic, parsley and a handful of pine nuts and raisins. Knead everything with your hands and shape the mixture into small round balls. Later, sprinkle with the breadcrumbs.
